Ingredients:
- 4 Qrunch Burgers (We used Original)
- 4 Delicata Squash
- 1 Cup Vegetable Stock
- 2 Medium Green Onion
- 1 Large Carrot
- 1 Cup Arugula
- 2 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 2 tsp. Black Pepper
- 1 tsp. Dried Sage
- 1 ½ tsp. Sea Salt
- 1-2 TBSP Olive Oil
Directions
- Preheat oven to 375 degrees.
- Cut tops off of delicata squash and pull seeds out and discard. Brush tops and inside of squash with olive oil.
- Chop and dice green onions and carrots.
- Add green onion, carrots, arugula and vegetable stock to a large bowl.
- Cook Qrunch Burgers in a skillet over medium-high heat for 2-3 minutes on each side, not cooking it all the way through.
- Crumble Qrunch Burgers, in big chunks, and add to large bowl.
- Add seasonings and mix together, then split amongst squash.
- Place filled squash on sheet pan lined with parchment.
- Bake for 1 hour, rotating sheet pan half way through.
- Once finished baking, let rest for 5 minutes then serve!
